A Kick of Mars: Easy Chili-Chicken Meatballs Recipe
An easy mid-week meal, or party appetizer dish, chicken meatballs are healthier than their beef and/or pork cousins. Great for people who need to strengthen their Mars, or who were born with the Moon in Aries.
- 2 lbs ground chicken
- 1 ½ cups panko breadcrumbs
- ½ Pasilla Pepper minced
- ½ Anaheim Pepper minced
- ½ Jalapeno Pepper seeded and minced
- 2 large eggs
- 5 cloves garlic minced
- 1 Tbsp onion powder
- 1 tsp smoked paprika
- 1 tsp Hatch chili powder
- 1 tsp chipotle powder
- ½ tsp cumin
- 2 tbsp olive oil
- 1 tbsp agave syrup
- 1 tsp salt
- ½ tsp black pepper
Preheat your oven to 400°F.
Combine the ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, minced chili peppers, eggs, garlic, spices, olive oil, agave syrup, salt, and pepper. Use your hands or a spoon to mix everything together until well combined.
Once the mixture is well-combined, start shaping it into small meatballs, about 1 to 1.5 inches in diameter. You should be able to make approximately 40 meatballs.
Bake: Place the meatballs on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until cooked through.
