Looking for a Fourth of July dessert? Well I’ve got the perfect one right here. It’s a red, white and blueberry pie. Infused with Fireball Whisky, freshly grated cinnamon and vanilla bean, this combination of Granny Smith apples, rhubarb and blueberries is a crowd pleaser.

The magic of the Fourth of July

I’m not a super patriotic person, but I do love a good Fourth of July celebration. It brings me back to the old days growing up when my parents would take us out to a dirt field to somewhat responsibly set off a barrage of fireworks. My dad was a huge fan of watching things explode, and so we always did it up, with sparklers, fountains, roman candles, Piccolo Pete’s and even miniature toy cannons that you could load with powder and create loud explosions. These days celebrations like that are a thing of the past, with a growing number of people voicing their hatred for the loud booms and potential fire danger. But I still get a bit nostalgic for the old days around this time of year, and was inspired to create a dessert to capture the imagination of a revolutionary celebration.

Astrologically, this pie is great for promoting abundance, love and change. So if you’re looking for a change in your finances or love life, this may be the pie for you. The break down of ingredients is as follows:

Like many fruits, apples are a fruit of love. They are associated with the planet Venus, and are also said to increase longevity (an apple a day keeps the doctor away) and due to the abundance of fruit on an apple tree, they correspond with abundance. Rhubarb is said to enhance male potency, as it appears to be a phallic symbol. It is associated with the planet Mars. Here it can be used to enhance action and energy around your intent. Berries in general are ruled by Jupiter, which can bring in a little luck, expand your mind, and help you stay optimistic which is always helpful.

Cinnamon and vanilla bean are ruled by the Sun and Venus respectively, so they bring some energy and the power of attraction to the mix.

Whiskey is used as an ingredient to promote change. Fireball in particular is infused with Cinnamon, which gives a bit of luck as well as attracts wealth, so this would be a great pie to change your luck and overall outlook when it comes to finances.

Red, white & blueberry pie

A Fourth of July dessert, combining apples, rhubarb and blueberry with the luck inducing properties of cinnamon and vanilla. Plus it incorporates Fireball Whisky for a little extra kick.

Ingredients

  • 2 Granny Smith apples cored and sliced thin
  • 2 teaspoons fresh squeezed lemon juice
  • 1 tablespoon Fireball whiskey
  • ½ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 3 tbsp cornstarch
  • ½ freshly grated cinnamon stick
  • 1- inch vanilla bean cut open and scraped
  • 1 ½ cups rhubarb 1-inch slice
  • 1 pint blueberries
  • 2 pie crusts

Instructions

  • Place apples, lemon juice, sugars, and Fireball, in a medium sized bowl and mix to evenly distribute spices. Allow to sit 45 minutes so that juices will come out and combine.
  • Preheat oven to 375 degrees.
  • After 45 minutes, add sliced rhubarb, blueberries, grated cinnamon, vanilla bean and conrstarch to apple mixture. Stir to combine, and dissolve cornstarch and allow to sit for an additional 15 minutes..
  • Take one pie crust out and place in pie dish. Fill crust with the fruit mixture.
  • Place second crust on top of pie and crimp edges to seal.
  • Bake 375 for 30 minutes. Lower to 350 and bake 30 minutes more.
